Cox
Coach Craig Cox is a veteran football coach with 20 years of experience at the collegiate level. As a Defensive Coordinator, he has coached defenses that were ranked in the top 5 nationally in both Division 2 and Division 1 FCS. He is the creator and author of “The 3-Digit Defense,” published in 2025 by Coach’s Choice. He is the owner of 1-of-1 Consulting and creator of the 1-of-1 Life Skills and Student Success program.
In addition to his focus on student success, he possesses a wealth of knowledge and experience in helping student-athletes navigate their college recruiting process. While coaching in college, he has spent several years as the program’s recruiting coordinator. Since 2021, he has been working with student-athletes through his 1-of-1 Life Skills & Student Success programs, as well as helping them find their right college fit.

Ervin
Prior to his arrival at OFFENSE-DEFENSE, Ervin was on the staff at Central State State University and served as the Director of Football Operations, Assistant Head Coach and Recruiting Coordinator.
Ervin managed critical duties and responsibilities of the operational and administrative affairs that are inherently involved in the operation for the football program as well as monitoring and coordinating all day-to-day aspects of the recruitment process.
Ervin is a graduate of Shawnee Mission Northwest (KS) High School. He played football and baseball at Coffeyville Community College (KS) and completed his collegiate football career at Winona State University (MN). Coach Ervin’s previous coaching stops include:

Ervin received his Bachelor Science degree in Education from Emporia State University (KS), and Master of Science degree in Educational Leadership from the University of Wisconsin – Oshkosh.
He and his wife, Alissa, have 3 children – daughter Michaila (Caila) 22, and sons Mikkiel (Kiki) 18 and Mikkari (Kari) 10.

Jordan
Owen Jordan had been a college football coach and talent evaluator with experience across the Big Ten, Big XII, Division II, and elite high-school football. His career includes developing future NFL players at Kansas State, signing the first 3-Star recruit in Lincoln University history, and coaching the #1 passer in Oklahoma—a 3,685-yard, 50-TD quarterback who led a 12-3 season with six Division I signees.
Coach Jordan has coached at the University of Minnesota, Kansas State, Lincoln University, Pawhuska High School, and Missouri S&T, working in roles that include Defensive Backs coach, Special Teams Coordinator, Offensive Coordinator, Recruiting Coordinator, and Academic Coordinator. His experience spans scouting, game-planning, player development, academic support, and building recruiting pipelines across Missouri, Oklahoma, Kansas, and Texas. He holds a master’s degree in Academic Advising from Kansas State University, giving him a strong foundation in supporting athletes both on the field and in the classroom
